Potato and white bean salad with garlic dressing
A simple salad with cannellini beans and potatoes garnished with a mixture of parsley, vinegar, garlic and oregano. Easy and tasty.

- 1 handful parsley leaves
- 1 small garlic clove
- 2 tbsp olive oil
- 2 tsp wine vinegar
- 1 tsp dry oregano
- salt and pepper to taste
- 500 g potato
- 1 can white beans (I used cannellini)
- 150 g cherry tomatoes

- Cook the potatoes in salty water until they are tender. Drain and put aside until they cool down completely.
- Mix vinegar with olive oil. Combine finely chopped parsley and garlic, oregano and a pinch of salt and pepper.
