Spinach and cheese savory quick bread Directions

  1. For this recipe I used the silicone mould made by Silikomart - Raggio.

  2. Heat 20 ml of olive oil in a pan, add frozen spinach, a clove of garlic, salt and cook over medium heat, stirring often, until the spinach is thawed and fragrant. Turn off the heat and let it cool down, discard the garlic, squeeze the spinach to loose some of the water and put it aside.
  3. In a bowl mix olive oil and eggs

  4. Add sifted flour, baking powder and the baking soda. Stir, add milk, grated pecorino cheese and squeezed spinach. Add a pinch of salt and pepper and stir again. Finally add diced cheese.

  5. Mix all the ingredients and move the batter into a bundt cake pan. If you use a classic non-silicone baking pan, grease it and flour it slightly.

  6. Cook in a preheated static oven at 200 °C for 50 minutes. After 30 minutes cover the bread with some aluminum foil so that it does not burn on the surface.
  7. Remove from the oven and let it cool completely before serving.

    lot of love. B.
