Today's recipe is a healthy and tasty vegetable dish. These baked vegetables are laid on a bed of tomato and bell pepper sause and can be used as a side dish or a vegetarian main course served with a garlic and oil bruschetta.

Beetroot hummus

Beside traditional chickpea hummus there are countless variations. Chickpeas are replaced with different types of legumes or the classic mixture of chickpeas, tahini, lemon and garlic is accompanied by different types of vegetables and spices. The beetroot hummus is one of these variations. Baked beetroot goes perfectly with the delicate chickpea flavour and surprises everyone with its lively and cheerful colour.

Broccoli and cheese bread

This bread is easy and quick to prepare. It'a very tasty savory brioche / cake flavored with pecorino and smoked cheese that goes well with the delicate taste of broccoli. Excellent for dinner or lunch can be eaten either hot or cold.

Cauliflower pizza

This particular dish has become popular among food bloggers in the last two years and I was really eager to try it. To be honest, this dish really surprised me. I was very skeptical about having the cauliflower in place of the classic pizza dough and yet the end result is very pleasant and tasty. This variation of the classic English appetizer is made with the addition of balsamic vinegar and Worcestershire sauce into the cream cheese. I give you a vegetarian version of mini Italian calzone. These small baked pizza dumplings are made with store bought pizza dough and have a filling of cooked potatoes, grilled zucchini and a piece of smoked cheese. For garnish I recommend sauces like aioli, ketchup or in this case my parsley pesto.

Pumpkin and peas spicy turmeric stew

Union of various spices with the predominant turmeric taste clashes with the sweetness of the pumpkin in this flavorful dish of vivid colors and flavors.

Another version of hummus. This time I used pumpkin to give a little sweetness to one of my favorite side dishes. Pumpkin goes perfectly with chickpeas, paprika (both sweet and smoked) and the heat of the chili powder. A simple and delicious appetizer with raw zucchini. The soft filling of cream cheese acquires flavor thanks to the lemon juice and basil. The walnuts give some extra crunchiness creating a balance for the palate. The recipe has been adapted from Gordon Ramsey’s recipe.

Savory pie with puff pastry, creamy filling with zucchini and San Marzano tomatoes

Today I made a savory cake created on the go with the ingredients that most of us already have at home: zucchini, tomatoes, cream cheese, store bought puff pastry. I used the San Marzano tomatoes because in my opinion they are the best but any other tomato variation should be fine. This cake is simple and easy to prepare, it is also very tasty as the tomato goes perfectly with the flavor of the cheese and basil.
