Today's recipe is a healthy and tasty vegetable dish. These baked vegetables are laid on a bed of tomato and bell pepper sause and can be used as a side dish or a vegetarian main course served with a garlic and oil bruschetta.

Beetroot hummus

Besides traditional chickpea hummus there are countless variants. Chickpeas are replaced with different types of legumes or the classic mixture of chickpeas, tahini, lemon and garlic is accompanied by different types of vegetables and spices. The beetroot hummus is one of these variants. The baked beetroot goes perfectly with the delicate chickpea flavour and surprises everyone with its lively and cheerful colour.

Broccoli and cheese bread

This bread is easy and quick to prepare. It'a very tasty savory brioche / cake flavored with pecorino and smoked cheese that goes well with the delicate taste of broccoli. Excellent for dinner or lunch can be eaten either hot or cold.

Cauliflower pizza

This particular dish has become popular among food bloggers in the last two years and I was really eager to try it. To be honest, this dish really surprised me. I was very skeptical about having the cauliflower in place of the classic pizza dough and yet the end result is very pleasant and tasty. It is a union of flavors between some kind of vegetable hash brown, the smells of various spices and yumminess of melted cheese.

I give you a vegetarian version of mini Italian calzone. These small baked pizza dumplings are made with store bought pizza dough and have a filling of cooked potatoes, grilled zucchini and a piece of smoked cheese. For garnish I recommend sauces like aioli, ketchup or in this case my parsley pesto.

Pumpkin hummus

Another version of hummus. This time I used the seasonal vegetable, that is the pumpkin, to give a little sweetness to one of my favorite side dishes. Pumpkin goes perfectly with chickpeas and flavour of paprika (both sweet and smoked) and the heat of the chili powder. Raw zucchini rolls with cream cheese and nut filling

A simple and delicious appetizer with raw zucchini. The soft filling of cream cheese acquires flavor thanks to lemon juice and basil. The walnuts give crunchiness to the whole appetizer creating a balance for the palate. The recipe has been adapted from Gordon Ramsey’s recipe.

Savory pie with puff pastry, creamy filling with zucchini and San Marzano tomatoes

Today I made a savory cake created on the go with the ingredients that most of us already have at home: zucchini, tomatoes, cream cheese, store bought puff pastry. I used the San Marzano tomatoes because in my opinion they are the best but any other tomato variation should be fine. This cake is simple and easy to prepare, it is also very tasty as the tomato goes perfectly with the flavor of the cheese and basil.

The salty spinach and cheese plumcake is a one of my favorite savory cakes. A soft and rustic bread to eat by itself or with, for example, a tomato salad.

Shakshuka is a delicious middle eastern egg dish. Perfect for breakfast these dippy eggs are cooked inside some fragrant tomato spicy sauce. Breakfast heaven.

These soft dumplings with a particular shape come from the Polish tradition. Simple and genuine contain very few ingredients and are quick and easy to prepare. Their shape with a dimple in the middle make them an excellent side dish for meals with meat sauce, cheese or other creamy sauces.

Spinach and ricotta savory tart

Perfect as a second dish or as an appetizer this tart with its creamy spinach filing is cooked over a layer of a homemade salty pastry. I won’t lie to you… the olive oil in the pastry was not my choice to make this tart more fancy… I just ran out of butter. The final result amazed me and it is as delicious as a regular all butter pastry so I recommend it to all off you. Next step in my cooking skills will be doing all olive oil pastry.

This vegetarian version of the traditional greek dish incorporates grilled eggplant and white sauce and a tasty lentil ragù. Everything baked with a crispy cheese layer.
