Cream of zucchini with asparagus
A quick and easy recipe for toddlers. I used zucchini and asparagus but to do this recipe you can use almostany any vegetables. Personally I call this pasta recipe a "lifesaver" because it guarantees my child a meal with vegetables and it is very quick to prepare when I have very little time available and the adorable little monster is already screaming: I'M HUNGRY!!!

- 0.25 medium zucchini
- 2 (or more) asparagus
- 1 tbsp (or more) cream cheese
- some pasta
- salt to taste
Cream of zucchini with asparagus Directions
- For this recipe you need pasta that takes 8 to 12 minutes of cooking. In a pot with boiling, salted water, cook pasta along with vegetables cut into not too small pieces.
- Towards the end of cooking take out the vegetables and put them into a blender. Add the cream cheese and a teaspoon (or more) of the cooking water.
- Blend all and add more cooking water if necessary. Drain the pasta and serve with the cream of zucchini and asparagus. If you like you can add a drizzle of extra virgin olive oli or a bit of grated hard cheese.
