Grilled vegetables soup
A creamy soup for toddlers made with oven grilled vegetables. This process adds flavor to the vegetables and makes them more appetizing for kids.

Ingredients for 2 - 3 portions
- 0.5 zucchini
- 2 small potatoes
- 0.5 eggplant
- extra virgin olive oil
- water to cover the vegetables
Grilled vegetables soup Directions
- Wash and peel the potatoes. Cut all the vegetables into thick slices (you can leave the skin on the zucchini and eggplant) and brush lightly with oil. Preheat the oven to 180°C. Put the vegetables on a baking tray lined with baking paper and bake for about 20 min. The potatoes must be cooked inside and slightly crispy outside.
